Professor Jenny Ames will deliver a lecture entitled; 'Food – Pleasure and Pain?' as part of the Health and Life Sciences Public Lecture Series.

About the lecture

As part of a typical Western diet, the majority of food we eat has been heat-processed in order to extend the shelf-life, and to create desirable flavour, colour and texture.

However, heating food can lead to the destruction of some nutrients and the formation of compounds that might have adverse effects on health.

Jenny will describe some of the chemical reactions that occur during common heat treatments applied to food, and the effects they can have on food. She will explain some of the methods developed to identify potentially undesirable compounds, and describe some of their possible detrimental effects.
